For Coffee Cake:
- 1 c all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c sugar
- 1/2 stick butter, unsalted
- 1 egg
- 1/4 c plain yogurt
- 1 tsp vanilla extract
- 2 c thinly sliced peeled cooking apples
- 1/4 c all-purpose flour
- 1/4 c brown sugar, firmly packed
- 1/2 tsp cinnamon
- 1/2 stick butter
1Preheat oven to 400 degrees. Spray 8′ sq. pan with cooking spray.
2In a small bowl combine 1 cup flour, baking powder, baking soda, and salt; mix well and set aside.
3In a large bowl combine 1/2 stick butter and sugar; beat til light and fluffy.
4Add egg and vanilla and blend well.
5Alternately add flour mixture and yogurt to butter mixture, beating well after each addition.
6Spread batter in sprayed pan. Arrange apple slices over batter.
7In a small bowl, combine all topping ingredients. With a pastry blender cut in butter until crumbly.
8Sprinkle topping evenly over apples.
9Bake at 400 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Enjoy!
